The stable cultivation of Scallops in the prefecture is aided by the improvement of aquacultural technology, which makes it possible to enjoy this seasonal taste annually. Scallops normally takes 3 to 4 years to mature enough to be harvested, but this method uses the half grown spats so the cultivation period is halved. The fresh Shellfish is quite popular and a growing part of the prefectural industry. The season for the Yesso Scallop is around June and July when the abductor muscle grow big, and the premature season is between November and December.
